WHITE CHRISTMAS PUDDING
INGREDIENTS:
4 tsp unflavored gelatin
2 ½ cups pineapple juice
2 tbsp lemon juice
1 tsp grated lemon rind
¼ cup sugar
1 cup whipped heavy cream
½ cup shredded coconut
DIRECTIONS:
- Soften gelatin in ½ of the pineapple juice; dissolve over hot water.
- Stir in remaining pineapple juice, lemon juice, grated rind and sugar.
- Chill til partially set then beat til fluffy.
- Fold in whipped cream and add coconut.
- Pour into mold.
- Chill til firm.
- Sprinkle with additional coconut.
