WHITE CHRISTMAS PUDDING

INGREDIENTS:
4 tsp unflavored gelatin
2 ½ cups pineapple juice
2 tbsp lemon juice
1 tsp grated lemon rind
¼ cup sugar
1 cup whipped heavy cream
½ cup shredded coconut

DIRECTIONS:

  1. Soften gelatin in ½ of the pineapple juice; dissolve over hot water.
  2. Stir in remaining pineapple juice, lemon juice, grated rind and sugar.
  3. Chill til partially set then beat til fluffy.
  4. Fold in whipped cream and add coconut.
  5. Pour into mold.
  6. Chill til firm.
  7. Sprinkle with additional coconut.
