Organic, Gluten-Free
INGREDIENTS:
2 cups peeled, diced and cooked organic potatoes
2 cups peeled, diced and cooked organic carrots
1 cup peeled, diced tart organic apples
1 cup minced Tree of Life Organic Dill Pickles
1/3 cup minced organic onion
2 cups cooked, peeled and diced organic beets
DIRECTIONS:
Mix the diced potatoes, carrots, apple and pickles and onion in a large serving bowl. Chill.
INGREDIENTS:
2/3 cup Organic Valley Heavy Cream
2 tbsp freshly squeezed organic lemon juice
Organic Bulk Evaporated Cane (Sugar)
Simply Organic Pepper
Hain Sea Salt
*Opt Hardboiled Greenawalt's Local Eggs
DIRECTIONS:
Combine all dressing ingredients and chill. Add the beets to the other vegetables just before serving so the salad will be the proper light pink color. Serve the dressing in a small serving bowl, mound it on top of the salad, or fold it into the salad just before serving.
* Optional — Decorate with slices of hard-boiled egg.
