PUMPKIN ROLL
INGREDIENTS:
3 eggs
2/3 cup can pumpkin
3/4 cup sugar
3/4 cup Bette Hagman's Featherlite Flour Mix
1 tsp baking soda
1/2 tsp cinnamon
DIRECTIONS:
- Line a 10 x 15” cookie sheet with wax paper.
- Pour batter and spread on wax paper.
- Cover with chopped walnuts.
- Bake 15 min @ 375 degrees.
- Remove from over.
- Turn upside down on towel.
- Leave wax paper on and roll like a jelly roll leaving towel/wax paper/cake together.
- Let cool completely about 2 hours.
- Unwrap wax paper from cake.
FILLING:
8 oz cream cheese
2 tbsp soft butter
1 cup powdered sugar
3/4 tsp vanilla
DIRECTIONS:
- Mix till smooth and creamy.
- Spread on cake and wrap in wax paper and refrigerate.
