PUMPKIN ROLL

INGREDIENTS:
3 eggs
2/3 cup can pumpkin
3/4 cup sugar
3/4 cup Bette Hagman's Featherlite Flour Mix
1 tsp baking soda
1/2 tsp cinnamon

DIRECTIONS:

  1. Line a 10 x 15” cookie sheet with wax paper.
  2. Pour batter and spread on wax paper.
  3. Cover with chopped walnuts.
  4. Bake 15 min @ 375 degrees.
  5. Remove from over.
  6. Turn upside down on towel.
  7. Leave wax paper on and roll like a jelly roll leaving towel/wax paper/cake together.
  8. Let cool completely about 2 hours.
  9. Unwrap wax paper from cake.

FILLING:
8 oz cream cheese
2 tbsp soft butter
1 cup powdered sugar
3/4 tsp vanilla

DIRECTIONS:

  1. Mix till smooth and creamy.
  2. Spread on cake and wrap in wax paper and refrigerate.
