PIZZELLES
INGREDIENTS:
1/4 cup oil
1/4 cup butter, softened
1/4 cup Spectrum Shortening
1 1/2 cup sugar
6 eggs
1 1/2 tsp anise oil
1 tbsp anise seeds
2 1/2 cups Gluten-Free Pantry French Bread Mix
2 tsp Featherweight Baking Powder
DIRECTIONS:
- Beat together oil, butter, shortening and sugar. Add eggs and flavoring and beat until smooth and fluffy.
Combine bread mix and baking powder. Add to liquids and beat until blended.
- Mixture will be very thick.
- Preheat Pizzelle maker according to manufacturer's instructions.
- Drop batter by teaspoonfuls onto center of each cookie section.
- Close lid and allow to cook 20–30 seconds or until lightly brown.
