PIZZELLES

INGREDIENTS:
1/4 cup oil
1/4 cup butter, softened
1/4 cup Spectrum Shortening
1 1/2 cup sugar
6 eggs
1 1/2 tsp anise oil
1 tbsp anise seeds
2 1/2 cups Gluten-Free Pantry French Bread Mix
2 tsp Featherweight Baking Powder

DIRECTIONS:

  1. Beat together oil, butter, shortening and sugar. Add eggs and flavoring and beat until smooth and fluffy.
  2. Combine bread mix and baking powder. Add to liquids and beat until blended.
  3. Mixture will be very thick.
  4. Preheat Pizzelle maker according to manufacturer's instructions.
  5. Drop batter by teaspoonfuls onto center of each cookie section.
  6. Close lid and allow to cook 20–30 seconds or until lightly brown.
