LINGUINI WITH CLAM SAUCE

INGREDIENTS:
½ cup butter
¾ cup olive oil
2 cups chopped scallion
1 tbsp chopped parsley
1 tsp oregano
1 tsp basil
4 cloves minced garlic
2 tomatoes, peeled and chopped
½ cup grated parmesian cheese
salt
pepper
3, 10 oz chopped baby clams
2 lbs GF linguini
8 tbsp grated parmesian cheese

DIRECTIONS:

  1. Drain clams and save juice.
  2. Heat butter and oil saving 4 tbsp.
  3. Saute scallions briefly then add everything except clams.
  4. Simmer 10-15 min.
  5. Add clams and keep hot.
  6. Cook linguini and drain.
  7. Mix with reserved 4 tbsp oil mix.
  8. Add 8 tbsp parmsan cheese and toss.
    (I used 32 oz frozen clams that I chopped and 16 oz clam juice)
