LENTIL SALAD WITH RED PEPPERS, MINT AND FETA

Organic, Gluten-Free, Casein-Free, Sugar-Free, Vegan

INGREDIENTS:
1 cup Bulk Organic Dried Lentils
6 tbsp Gourmet Artisan Organic Olive Oil
6 tbsp Eden Organic Red Wine Vinegar
2 cloves Organic Garlic
½ tsp Simply Organic Cumin
Hain Sea Salt
Simply Organic Pepper
1 small diced Organic Onion
1 finely diced Organic Red Pepper
¼ cup chopped fresh mint plus one sprig for garnish
6 oz Organic Valley crumbled Feta Cheese

DIRECTIONS:
Rinse lentils and drain. Add water to cover by 2 inches. Bring to a boil over high heat. Reduce to medium to low heat and simmer uncovered 15-20 minutes or until lentils are tender. Remove from heat, drain immediately and place in bowl. In a separate bowl, whisk oil, vinegar, garlic, cumin, salt and pepper to taste. Add to lentils and toss. Add onion and red pepper and toss gently. Let stand 20 minutes at room temperature.

Serve on a platter sprinkled with feta cheese and garnished with a mint sprig.
