HEARTY PUMPKIN CHILI RECIPE

Chili is simply great for fall and winter warmth! Here's a chili recipe that uses the healthy flavor or pumpkin to give it extra flavor and texture.

Servings: 4
Carbs per serving: 1 g

INGREDIENTS:
1 lb ground beef or turkey
1 cup onion, chopped
1 cup green pepper, chopped
1 garlic clove, minced
2 (14.5 oz) cans diced tomatoes
1 cup pumpkin, canned or fresh
1 Tbsp. chili powder
1 tsp. cumin
½ tsp. pepper
dash of salt
½ cup grated cheddar cheese
½ cup sour cream

DIRECTIONS:

  1. In a frying pan, sauté the beef/turkey, onion, green pepper and garlic until meat is brown.
  2. Pour off grease and add in tomatoes, pumpkin, chili powder, cumin, pepper and salt.
  3. Mix well.
  4. Cover and simmer for 20 minutes.
  5. Serve with cheese and sour cream as desired.
