GUACAMOLE

From: Jane Citron's Living to Cook Book

2 large organic avocados
3 tbsp Santa Cruz Organic lime and/or lemon juice
1 small organic onion, grated
2 small green chili peppers, finely chopped (about 2 tbsp), or to taste
1 small organic garlic clove, minced
1 organic tomato, peeled, seeded and chopped (about ½ cup)
Hain sea salt to taste
1 tbsp Spectrum Organic mayonnaise (optional)

DIRECTIONS:
Peel and seed avocados. Place in a small bowl and mash with a fork. Add juice, onion, green chili peppers, garlic, tomato and salt. Mix well. Depending on the consistency of the mixture, you may wish to add a small amount of mayonnaise for creaminess.
