GLUTEN-FREE OATMEAL COOKIES

INGREDIENTS:
1 ¼ cups butter
¾ cup brown sugar
½ cup sugar
1 egg
1 tsp vanilla
1 ¾ cup Bette's Featherlight Flour Mix
¼ cup sweet rice flour
1 tsp xanthan gum
1 tsp soda
3 cups gluten-free oats
Optional:
    2 tbsp orange rind
    ½ cup chocolate chips
    ¾ cup chopped cranberries

DIRECTIONS:

  1. Beat butter and sugars together til fluffy.
  2. Beat in egg and vanilla.
  3. Add dry ingredients – oats last.
  4. Drop onto ungreased cookies sheet.
  5. Bake at 375 for 8-9 min.
