1 - 2 tbsp olive oil
1 - 2 red onions thinly sliced
2 pears thinly sliced
4 cloves garlic chopped
1 - 2 tbsp brown sugar
1 tbsp balsamic vinegar
2 cups gorgonzola, blue cheese crumbles or Feta cheese
2 tbsp fresh thyme leaves chopped
½ - 3/4 cup chopped pecans or walnuts
1 - 3 flatbreads or lavash
DIRECTIONS:
Preheat broiler to 475. In a skillet heat oil then add red onions and pear. Bring to a simmer stirring constantly. Reduce heat and cook til onions are soft. Add garlic, brown sugar and vinegar. Cool slightly. Cook until mixture is caramelized. Place on baking sheet and spread sprinkle cheese over flatbread(s). Spread onion mixture over top the cheese and top with thyme and nuts. Place under broiler til flatbread warms and cheese slightly melts. Cut into wedges using a pizza cutter.
