CRANBERRY PECAN YAM BAKE

INGREDIENTS:
1 40oz can drained yams
3 tbsp butter
½ cup light corn syrup
¼ cup brown sugar
1 tbsp cornstarch
½ tsp gluten-free vanilla extract
¼ tsp allspice
½ tsp cinnamon
pinch of salt
½ cup pecan halves
1/3 cup dried cranberries

DIRECTIONS:

  1. Place drained yams in a greased 2-qt shallow casserole dish.
  2. In a small saucepan, melt butter; add brown sugar, corn syrup, cinnamon, salt, vanilla, allspice and cornstarch.
  3. Cook 1-2 minutes or til smooth.
  4. Pour over yams.
  5. Sprinkle with pecans and cranberries.
  6. Bake @ 350 for 25-30 min or til hot and bubbly.
