CORN PUDDING
INGREDIENTS:
½ cup butter
¼ cup sugar
3 tbsp GF flour (or 2 tbsp cornstarch and 1 tbsp GF all-purpose flour)
2 beaten eggs
1 ½ tsp baking powder
2, 10 oz. thawed frozen whole kernel corn
DIRECTIONS:
- Preheat oven to 350. Melt butter in saucepan.
- Mix sugar and flour.
- Stir into melted butter.
- Stir in milk, eggs and baking powder.
- Mix well. Stir in corn.
- Pour mixture into a buttered 2-quart casserole.
- Bake til top is golden brown and center is set, about 45 min.
