CORN PUDDING

INGREDIENTS:
½ cup butter
¼ cup sugar
3 tbsp GF flour (or 2 tbsp cornstarch and 1 tbsp GF all-purpose flour)
2 beaten eggs
1 ½ tsp baking powder
2, 10 oz. thawed frozen whole kernel corn

DIRECTIONS:

  1. Preheat oven to 350. Melt butter in saucepan.
  2. Mix sugar and flour.
  3. Stir into melted butter.
  4. Stir in milk, eggs and baking powder.
  5. Mix well. Stir in corn.
  6. Pour mixture into a buttered 2-quart casserole.
  7. Bake til top is golden brown and center is set, about 45 min.
