CHOCOLATE CHERRY LOAF

INGREDIENTS:
2 cups Bette Hagman's Four Bean Flour Mix
1 1/2 tsp xanthan gum
1/2 cup sugar
1 tsp baking soda
1 tsp baking powder
1 cup chopped walnuts
1 cup Enjoy Life chocolate chips
4 tbsp butter
2 eggs
3/4 cup milk
1/2 cup St. Dalfour's Dark Cherry Spread
1 tsp vanilla

DIRECTIONS:

  1. In a mixing bowl, whisk together flour mix, xanthan gum, sugar, baking soda and powder and chopped walnuts.
  2. Set aside.
  3. Melt chocolate chips and butter in a saucepan over low heat.
  4. In a medium bowl, whisk the eggs lightly.
  5. Add milk, fruit spread and vanilla.
  6. Beat until well blended.
  7. Add this and the chocolate mixture to the dry ingredients and beat just until moistened.
  8. Spoon into a greased loaf pan and bake for 50-60 minutes at 350.
