CHOCOLATE CHERRY LOAF
INGREDIENTS:
2 cups Bette Hagman's Four Bean Flour Mix
1 1/2 tsp xanthan gum
1/2 cup sugar
1 tsp baking soda
1 tsp baking powder
1 cup chopped walnuts
1 cup Enjoy Life chocolate chips
4 tbsp butter
2 eggs
3/4 cup milk
1/2 cup St. Dalfour's Dark Cherry Spread
1 tsp vanilla
DIRECTIONS:
- In a mixing bowl, whisk together flour mix, xanthan gum, sugar, baking soda and powder and chopped walnuts.
- Set aside.
- Melt chocolate chips and butter in a saucepan over low heat.
- In a medium bowl, whisk the eggs lightly.
- Add milk, fruit spread and vanilla.
- Beat until well blended.
- Add this and the chocolate mixture to the dry ingredients and beat just until moistened.
- Spoon into a greased loaf pan and bake for 50-60 minutes at 350.
