CHOCOLATE CHERRY CHEESECAKE

INGREDIENTS:
1-1/2 cups GF crushed cream-filled chocolate sandwich cookies (about 18)
2 tablespoons butter, melted
3- 8 ounce packages cream cheese, softened
1 cup sweetener of choice
1 tsp vanilla
¼ tsp almond extract
¾ cup dried cherries (see below)
3 eggs
1 - 8 ounce bar semi-sweet chocolate, melted, slightly cooled

DIRECTIONS:

  1. Preheat oven to 325 degrees.
  2. Mix cookies and butter; press onto bottom of 9-inch springform pan. Bake for 10 minutes.
  3. Pour hot water over cherries and let stand 10 minutes.
  4. Drain and dry well.
  5. Beat cream cheese, sugar, vanilla and almond extract with electric mixer on medium speed until well blended.
  6. Add eggs, one at a time, mixing on low speed until well blended.
  7. Blend in melted chocolate and dried cherries; pour over crust.
  8. Bake for 50 to 55 minutes or until center is almost set.
  9. Garnish with chocolate shavings and additional dried cherries.
