CHOCOLATE CHERRY CHEESECAKE
INGREDIENTS:
1-1/2 cups GF crushed cream-filled chocolate sandwich cookies (about 18)
2 tablespoons butter, melted
3- 8 ounce packages cream cheese, softened
1 cup sweetener of choice
1 tsp vanilla
¼ tsp almond extract
¾ cup dried cherries (see below)
3 eggs
1 - 8 ounce bar semi-sweet chocolate, melted, slightly cooled
DIRECTIONS:
- Preheat oven to 325 degrees.
- Mix cookies and butter; press onto bottom of 9-inch springform pan. Bake for 10 minutes.
- Pour hot water over cherries and let stand 10 minutes.
- Drain and dry well.
- Beat cream cheese, sugar, vanilla and almond extract with electric mixer on medium speed until well blended.
- Add eggs, one at a time, mixing on low speed until well blended.
- Blend in melted chocolate and dried cherries; pour over crust.
- Bake for 50 to 55 minutes or until center is almost set.
- Garnish with chocolate shavings and additional dried cherries.
