TANGY BROCCOLI CHEDDAR SOUP
INGREDIENTS:
¼ cup butter
1 cup chopped onions
2 cloves garlic
2 tbsp flour (or cornstarch)
2 cups heavy cream (or 1 cup cream & 1 cup milk)
3 cups chicken broth
¾ lb grated sharp cheddar cheese (or cut into small pieces)
½ tsp nutmeg
½ tsp pepper
¾ tsp salt (optional)
1/8 to ¼ tsp cayenne pepper
2 tbsp Dijon mustard
3 cups broccoli cut into small pieces
DIRECTIONS:
- Melt butter in large saucepan, add onions and sauté til tender.
- Add garlic and sauté 30 seconds.
- Add flour, stir for 2 minutes.
- Whisk in cream and chicken broth.
- Bring to a boil, reduce heat and add cheese. Add seasonings and mustard.
- Add broccoli. Do not let soup boil after cheese has been added.
- Let simmer til broccoli is tender.
- Garnish with additional shredded cheese or diced red pepper.
